Icilda arrived in the UK from Clarendon, Jamaica in 1954, bringing her touch of magic and gift with food along with her.
The food she created in her kitchen brought friends and family from miles around to her kitchen door, just for a taste of her food and she never turned any of them away.
She loved food so much that when she wasn't cooking, she was either at the markets searching for the best produce or tending her garden and growing her own fruits and vegetables.
Icilda used to get her herbs from her large garden. She used to take me to the market to get fresh foods.
Nowadays we get the freshest ingredients from the markets of Birmingham and London.
Pineapple, Guava, chillis....
We prepare our seasonings with rapeseed oil because of its higher smoking point. Pink salt for the extra minerals and flavour, brown sugar for the molasses. Limes, pineapples, guava’s, soursop and lots of other fruits for their wonderful flavours!
